Quince fruit is very similar to apples accept that the fruit has more starch. The fruit is light green to yellow in color. The skin of the fruit normally has a woolly covering but at Ito Packing we have cleaned the fruit so there is no fuzz. The flesh is lightly scented when raw and somewhat dry in texture.
The real magic of the quince appears when the fruit is cooked. The starch is converted to sugars that make the fruit very pleasant to eat. A simple sauté of the peeled and cored fruit in butter with a little cream and sugar makes a wonderful dessert. In baking it can be used like an apple accept you can reduce the amount of sugar used. Quince also makes a delightful jelly which turns red while cooking.
